Recipe #44 – Steak and balsamic-glazed mushrooms
Delicious! Probably one of my best meals thus far in the challenge, simple to prepare & easy to cook. My kind of 20 minute meal.
While others around the world partook in Meat Free Monday, I ended up having a medium rare steak… no disrespect meant as I do my meat-free day on a Tuesday, as you know by now and probably have to have a second this week to make up for this one…
The steak is coated in a mix of fresh thyme, lemon zest, salt and pepper and seared in a grill pan, served with a side of balsamic-glazed mushrooms and rocket.
I mixed it up a bit by adding a bit of wild rocket into my home grown salad rocket, all topped with Jamie delightful mustard dressing.
I’ve shared before that I’m not a heavy red meat eater, but occasionally I splurge, tonight was one of those nights and I’m guilt free, at least for now…
