Cheesy quesadillas with crunchy salad
Followers will know I have a penchant for Mexican food and it seems to be making a come back with various local supermarkets now offering tortillas, tacos etc.
Many or most dishes are simple and wholesome and today’s offering is no different, courtesy of Jamie’s Recipes 10-minute meal pack.
For those new to Mexican food a quesadilla is the equivalent of a ‘toastie’, ideal for a quick lunchtime snack or meal starter.
Start by adding some coriander, chilli & spring onions together in a blender, whiz them and then add in some grated cheese, lay out you tortillas and spread the mix evenly between them, cover with another tortilla and press firmly to help them stick together. Add them to a hot frying pan for a minute or two on each side and enjoy!
To take it up a notch try your hand at a crunchy salad by whizzing some radishes, fennel and carrots together in a blender, spoon over some natural yogurt, add a dash of red wine vinegar, olive oil and salt & pepper to taste.
A great lunchtime snack best enjoyed with a Corona on a hot summer day while day dreaming of that holiday you’ve always wanted to take in Cancún.

I love quesadillas! One of our favourite Sunday night meals. I love sweetcorn & spring onions, with a dab of sweet chilli sauce & cheese for mine.
