Creamy macaroni cheese
Jamie’s take on a perennial favourite, and it’s easy to see why this is ‘Comfort Food’.
Truthfully prior to this the closest I’ve come to a ‘home made’ Mac & Cheese is picking up a one at Woolies. The only ‘home made’ element in that is that I took it ‘home’, which ‘made’ sense…
It’s surprisingly simple to prepare though, and for the life of me I don’t know what kept me from trying in the past.
Simply cook your pasta as per the packet instructions, add some lightly cooked leeks and a sprig or 2 of rosemary into an oven proof pan, cover with some bread crumbs, grated cheese and a handful of halved cherry tomatoes, bake in the oven.
Serve with a side salad, in my case a mix of greens from my garden, several multi-leaf lettuces, mustard, basil, spring onions, dressed in red wine vinegar dressing.
It’s serious comfort food, hearty, fresh and leaves you feeling satisfied.
Looks lovely, but doesn’t in involve some sort of white sauce as well?

Interestingly, no it doesn’t, which I thought a bit odd as well, the leek sauce replaces the white sauce.
